Bac Ha Market - The Traditional Market of North West of Vietnam

Thang Co is a well-known specialty in the high jungle mountains of Sapa, Lao Cai Province. Although Thang Co is not an easy dish to swallow for most tourists, no trip to Sapa would be perfect without discovering the flavor of this special dish.

Thang Co is popular to every visitor as a specialty recipe of the H’Mong ethnic minority group. The words “Thang Co” in the H’Mong language may be translated as “big pot of water”. The traditional main ingredient of this dish is horsemeat; nevertheless, ethnic local cooks “Thang Co” by using buffalo, cow or pork.

Thang Co seems not to be easy to eat for the majority of visitors to Sapa, especially women. It should be eaten with fresh vegetables such as lemongrass, chayote, cabbage, chili leaf. Its special sauce with a spice and a bitter zing makes Thang Co have the unique taste of the H’Mong people, which is different from other tastes you have ever enjoyed.


Local people said that long time ago, the H’Mong only traveled on foot or rode horse. As consequences, the dish of Thang Co appeared as a traditional feast thanks to the abundance of horsemeat. After the horses became sick or too old to work, they would be used for cooking the dish of Thang Co. After butchering and washing, the meat is stewed. The taste extremely pungent in the beginning but is neutralized with various spices. The meat is then chopped into small pieces and tossed with spices in a big pot. Water is added to stew the meat and bones for hours.

Accordingly, the phrase “Cheer Thang Co” was celebrated 200 years ago among the H’Mong in the local markets.
